Potato Soup

Serves: 4 – 6 Cook Time; 20 – 25 minutes Ingredients:

7 potatoes medium cubed

2 celery ribs diced

½ medium red onion chopped

1 quart water

4 teaspoons chick boullion granules

¼ cup butter

¼ cup flour

2 teaspoons salt

½ teaspoon pepper

1 quart milk

Directions:

1. Combine potatoes, celery, onion, water, and boullion in a medium stock pot. Bring to a boil. 2. Reduce heat; cover and simmer 20 – 25 minutes or until potatoes are tender 3. Place ½ of the potato mixture in a blender. Cool slightly then puree. Set aside 5. Stir in flour, salt, and pepper until smooth. 6. Gradually add milk. Bring to a boil and stir 2 minutes. 7. Return Potato puree to the pot and heat 4. In same pot as the reserve, melt butter.

Garnish with scallions, bacon bits, cheese, or croutons
