Nana’s Strawberry Cake

Slap Yo’ Momma and Have Another Piece

Ingredients: 2 white cake mixes (do not follow directions) 1 cup vegetable oil 8 eggs 2 3 oz boxes strawberry JELL-O 1 cup boiling water 1 small box (about 2 cups) sweet frozen strawberries undrained

Directions:

Add only these ingredients. Do not add ingredients according to cake box directions.

Beat oil and eggs. Dissolve JELL-O in boiling water. Add to oil and eggs and beat again Add cake mix. Add sweetened strawberries and mix. Do not use more than 2 cups sweetened strawberries (Cake will fall apart.) Use (3) 9” round pans. Spray pans with Bakers Joy, put parchment paper in, and spray with Bakers Joy again or just spray the pan. Pour into pans. Bake at 325° for 15 -25 minutes or until toothpick comes out clean. Spray cooling racks with Pam to keep cake from sticking. Turn cake out onto cooling racks. Cool completely. Ice with Strawberry Cake Frosting. Can also make in 9" X 13" pan if you don't want to mess with layers. Ooo but the layers are pretty when topped with sliced strawberries. (See picture.)

Icing: Ingredients 1 cup butter, salted 1 lb box powdered sugar ½ cup unsweetened strawberries, cup up, frozen 2 qts. fresh strawberries

Directions: Mix butter and powdered sugar in mixer on low. Add 1/4 cup frozen strawberries. Add a little more at a time until frosting is the right consistency. Be careful not to add too many or icing will be too thin. Place a small spoonful of icing on cake plate to keep cake from sliding. Ice stack each layer and sides of cake. To decorate, remove leaves and slice at least 1 quart of strawberries. Layer the strawberry slices around the outer edge of the cake. Indent subsequent rows. Place a whole strawberry upside down in the middle and decorate with green icing if desired.
