Oh My Gosh! Is that ever good! Mexican Cornbread Mimi & Nana
Recipe By: Mimi (and Nana) Serves: 8 Yield: 8 Cook Time: 45 min. Ingredients
1 cup yellow cornmeal 1/2 teaspoon baking soda 1 t

1/2 teaspoon salt
•
2 tablespoons flour, heaped
•
1 cup milk
•
2 eggs
•
3 tablespoons oil 1 cup cream corn
•

Directions
1. Mix the cornmeal, baking soda, baking powder, salt, and flour. 2. Mix the milk, eggs, oil, and cream corn. 3. Mix the two mixtures together. Pour 1/2 mixture into hot, greased cast iron skillet and put about 3 Jalapeño peppers, chopped on top. Top with 1/2 pound grated cheddar cheese. Add the rest of the mixture on top. Bake about 45 minutes at 400˚ . DO NOT DOUBLE RECIPE! Make 2 recipes separately.
